Ingredients

  • 750 g black salsify (s)
  • 30 g butter
  • 200 g ham, cooked
  • 1 medium onion (s), finely chopped
  • 1 garlic clove (s), pressed
  • 25 g flour
  • 125 ml cream
  • 125 ml broth (black salsify broth)
  • 1 egg yolk
  • 75 g cheese, rated
  • salt and pepper
  • nutmeg

Instructions

  1. Peel and clean 750 g fresh salsify, best with disposable gloves. Immediately put them in vinegar or lemon water, otherwise they will quickly turn brown. Cook in salted water for 25 minutes.
  2. In the meantime, spread a baking dish with 5 g butter.
  3. Put half of the cooked ham in, then add the cooked salsify and finish with the rest of the ham.
  4. In the remaining butter, sauté the chopped onion and the pressed garlic until light yellow. Briefly toast 25 g flour in it. Beat in 125 ml of cream and 125 ml of black salsify broth and reduce to a creamy sauce. Season with a little salt, pepper and nutmeg.
  5. Remove some of the sauce, whisk with the egg yolk and add to the remaining, no longer boiling sauce. Do not let it boil anymore, otherwise the egg yolk will curdle! Finally, add 75 g of grated cheese to the sauce and pour it over the salsify.
  6. Bake in a preheated oven at 225 degrees top / bottom heat for about 20 minutes.
  7. Parsley potatoes go well with it.
