  • 1 kg black salsify (s)
  • 250 g potato (s)
  • 200 g processed cheese
  • 750 ml vegetable stock
  • 100 ml white wine, dry
  • lemon juice or vinegar
  • salt and pepper
  • parsley

Instructions

  1. Put the lemon juice or vinegar in a bowl of water. Peel the salsify, cut into 3 cm long pieces and place in the lemon water so that they do not darken.
  2. Peel the potatoes and cut into 1 cm cubes. Bring the vegetable stock with the wine to the boil. Drain the salsify and add to the vegetable stock with the potatoes and simmer for about 15 minutes.
  3. Fold in the processed cheese and simmer for another 5 minutes. Season with salt and pepper, add the chopped parsley and serve.
