Ingredients

  • 3 large egg (s)
  • 1 cup butter, soft, approx. 25 g
  • 4 small bananas, mashed
  • 0.5 teaspoon ½ vanilla flavor
  • 1 ½ cup flour, approx. 80 g
  • 0.75 ¾ cup (s) sugar, approx. 125 g
  • 2 teaspoons baking soda
  • 0.5 teaspoon ½ baking soda
  • 0.25 teaspoon ¼ salt
  • 1 teaspoon cinnamon

For the topping:

  • 6 tablespoon butter, soft
  • 110 g cream cheese
  • 1 cup powdered sugar
  • 0.5 teaspoon ½ vanilla flavor
  • 1 ½ teaspoon cinnamon

Instructions

  1. Preheat the oven to 200 ° C and prepare the muffin cups.
  2. Now all the ingredients for the dough are mixed together.
  3. If you want, you can also separate the egg white and the yolk first.
  4. Beat the egg whites until stiff, mix solid and liquid ingredients separately and then fold the solid ingredients into the liquid.
  5. Pour the batter into the muffin molds and bake in the oven for 20-25 minutes.
  6. For the frosting, the butter and cream cheese are first mixed together. Then powdered sugar, vanilla and cinnamon are gradually added and the mixture is whipped until it is fluffy.
