Ingredients

  • 900 g beef, (thinly sliced beef sirloin)
  • 4 spring onions, cut into rings
  • 1 red pepper (s), in pieces x2cm
  • 100 g suar snap peas, halved diaonally
  • 1 carrot (s), diced
  • 4 hot peppers, green, cut into 0.5 cm pieces
  • 1 ginger, 4cm, chopped
  • 3 sticks lemongrass, only the inside white
  • 4 clove (s) garlic
  • 2 chilli pepper (s), red
  • 3 sprigs mint, only the leaves
  • 6 tablespoon oyster sauce
  • 6 tablespoon fish sauce, (nuoc nam)
  • 4 tablespoon soy sauce, sweet
  • 2 tablespoon lime juice
  • 300 ml water
  • 300 g noodles, (rice noodles)
  • Oil, for frying

Instructions

  1. Cooking rice noodles.
  2. First, finely chop ginger, lemongrass, garlic and chillies in the food processor and then use the mortar to make a seasoning paste.
  3. Sear the meat in hot oil in portions in a wok. Remove from the wok, set aside and then fry the spring onions, bell peppers, sugar snap peas, carrots and peppers as well.
  4. Set the vegetables aside as well.
  5. Now add the seasoning paste, oyster, fish and sweet soy sauce to the wok, add 300 ml of water and simmer for a while (5-6 minutes). Then add the meat, vegetables and mint leaves and heat briefly. Season with lime juice - done.
  6. Serve with warm rice noodles.
