Ingredients
- 3 cloves garlic
- 5 chilli pepper (s), Thai
- 4 tablespoon fish sauce
- 4 tablespoon lime juice
- 1 tablespoon cane sugar, brown
- 2 medium onion (s), red
- 1 bunch chives
- 2 stalks coriander, Thai
- 500 g beef fillet (s)
- 2 tablespoons oil

- For the sauce, peel the garlic, wash the chili peppers and remove the stalk. Crush both well in a mortar and place in a bowl. Mix with the fish sauce, lime juice and sugar.
- Halve the onions lengthways, peel and cut into fine strips. Wash the chives and cut into 3 cm long pieces. Wash and roughly chop the coriander. Rinse beef fillet with cold water and pat dry. Then remove the skin and tendons and cut into steaks about 2 cm thick.
- Let the oil get very hot in a large, heavy pan (wok) and fry the steaks medium on each side for about 3 minutes on each side. Let cool and cut into thin strips.
- Add the beef strips, onions, chives and coriander to the bowl for the marinade and mix everything well.
- With this dish, the quality of the meat is crucial because cheap frozen fillet from the discounter spoils the taste. Pay attention to a dark red color when buying. This is a sign that it is well hung.
