Black Forest Cakes

Ingredients

  • 150 g flour
  • 50 g starch
  • 3 tbsp cocoa
  • 4 eggs
  • 150 g sugar
  • 1 tbsp baking powder
  • 300 g canned cherries with juice
  • 500 ml cream
  • 3 tbsp sour cream + 1 tbsp sugar
  • 5 g gelatin
  • cinnamon

Directions

  1. Prepare the ingredients for the biscuit.
  2. Divide the eggs into whites and yolks.
  3. Beat the whites tightly with a pinch of salt.
  4. Grind the yolks with sugar.
  5. Combine flour, starch, cocoa, and baking powder.
  6. Mix thoroughly.
  7. Add dry mixture to yolks and stir.
  8. Gradually add proteins, stirring gently to one side.
  9. Pour the finished dough into a parchment-lined mold and bake until tender.
  10. Cool the finished dough and cut into two cakes.
  11. Prepare the ingredients for the cream. Drain the cherries by collecting the juice. Dissolve gelatin in cold water or milk.
  12. Boil the cherry juice, add cinnamon, remove from heat, cool slightly. Heat the dissolved gelatin and strain, pour into the cherry juice, stirring occasionally.
  13. Add cherries to the juice.
  14. Beat the sour cream with sugar.
  15. Beat the cream into a firm foam, adding sour cream. The cream is ready.
  16. Put the bottom cake in a mold, put the cherry and juice.
  17. Put the cream on top and cover with the second cake. Coat with cream on all sides. Decorate the finished cake as you wish.
  18. Cut into cakes.
