For muffins:

  • Flour – 220 g
  • Baking powder – 10 g
  • Butter – 100 g
  • Sugar – 100 g
  • Powdered sugar – 100 g
  • Salt – 1 pinch
  • Milk – 120 ml
  • Eggs – 2 pcs.
  • Blackberries – 50 g

  • Blackberries – 150 g
  • Powdered sugar – 80 g

  1. Rinse ripe blackberries and dry them on a napkin or paper towel.
  2. Make muffin dough. To do this, combine softened butter and sugar in a bowl. Beat butter and sugar with a mixer for a minute, add eggs and powdered sugar. Whip everything again for a minute, pour in milk, stir for a couple of seconds.
  3. Sift flour with baking powder and salt into a bowl with a liquid dough base. Knead the dough with a whisk or mixer at low speed.
  4. Prepare 12 muffin molds (I used silicone molds, lined them with paper capsules). 1 tablespoon put the dough in each of the molds. Now place one large or several medium-sized blackberries in the center of each muffin.

    Spread out the remaining dough, covering the blackberries (another 0.5 tablespoons for each muffin).
  5. Bake the blackberry muffins in an oven preheated to 180 degrees for 25 minutes. Transfer the finished muffins to a wire rack and let cool.
  6. Use the icing to garnish the blackberry muffins. Rub the remaining blackberries through a strainer to separate the juice from the seeds. Pour 1 teaspoon into the blackberry juice. icing sugar and stir in the icing.
