Put the milk with the cream in a saucepan. Scrape out the vanilla pod and quarter the remaining pod. Put the pulp and the pod quarters with the grated orange peel, the cinnamon stick and some nutmeg in the saucepan and slowly bring to the boil.
Beat the egg yolks with the sugar until frothy. As soon as the milk mixture boils, remove from the hob and slowly pour through a sieve to the egg yolk and stir. Add the whiskey and triple sec.
Pour into glasses (double-walled at best) while still hot, garnish with grated nutmeg, a little cinnamon and grated orange peel.
