  • 600 g flour (wheat flour)
  • 400 g flour (rye flour)
  • 250 g quark
  • 4 teaspoons salt
  • 2 packs yeast (dry yeast)
  • 750 ml water, lukewarm

Instructions

  1. Put the ingredients - except for the water - in a food processor and mix with the dough hook. Then slowly pour in the water and knead for a few minutes. The longer you knead the dough, the looser it becomes. Now cover and rest in a warm place for half an hour to an hour.
  2. Then knead by hand and shape into 2 loaves and place on a baking sheet lined with baking paper. Let rest covered again. Now preheat the oven to 250 ° C top / bottom heat. As soon as the pipe is hot, rub the bread with lukewarm water and prick with a fork (so that it does not crack).
  3. Now slide the bread into the oven and bake it first at 250 ° C for about 20 minutes, then turn it down to 200 ° C and bake for another 30 minutes.
  4. If it gets too dark, put aluminum foil on the bread and continue baking. If the bread sounds hollow when you tap the floor, it`s done.
  5. Tip: You can add spices such as fennel, coriander and caraway seeds or prepare it with onions and herbs.
