Cabbage Fried in Sour Сream Batter with Garlic and Herbs

White cabbage fried in sour cream batter with garlic and herbs is simple, quick, and tasty. This dish is perfect as a hearty snack, or it can serve as a side dish for fish, meat, or chicken.

Ingredients

  • White cabbage – 1 head of cabbage (1 kg)
  • Eggs – 2 pcs.
  • Sour cream 15% – 160 g
  • Water – 100 ml
  • Refined vegetable oil (for frying) – 90 ml
  • Wheat flour – 6-8 tbsp
  • Garlic – 1-2 cloves
  • Salt – 1 teaspoon
  • Ground black pepper – to taste
  • Ground paprika – to taste
  • Fresh greens – ½ bunch

Directions

  1. We prepare the necessary products.
  2. We clean the cabbage head from the upper leaves and cut off the protruding contaminated part of the stump. We wash the cabbage, dry it and cut it together with the stump into slices about 1-1.5 cm wide.
  3. Put a deep pot of water on the fire and bring to a boil. Put cabbage slices in boiling water and blanch over low heat for 8-10 minutes.
  4. Gently transfer the blanched cabbage pieces into a colander and leave for 15-20 minutes to drain excess liquid from them.
  5. Peel the garlic and chop finely with a knife.

    We wash the greens, dry them, and chop finely.
  6. Cooking batter. Break the eggs into a deep bowl and beat them with a whisk until fluffy.
  7. Add sour cream, cold water, black pepper, paprika, salt to taste, herbs and garlic. We mix.
  8. Add flour in portions, stirring each time until smooth.
  9. The finished batter is similar in consistency to sour cream.
  10. Dip the cabbage slices into the batter so that they are completely covered with a thick layer of batter.
  11. Heat 2 tablespoon in a frying pan. tablespoons of refined vegetable oil and spread the cabbage in the batter. Fry the cabbage for about 1-2 minutes, until golden brown.
  12. Gently turn the cabbage over with a kitchen spatula and fry on the other side for about 1 minute, also until golden. We shift the finished cabbage into a plate, fry the next batch. Add oil to the pan as needed.
  13. So fry all the cabbage slices.
    Preheat the oven to 180 degrees.
  14. Lubricate the form with vegetable oil, put the cabbage in batter in it, and cover with foil. We put in an oven preheated to 180 degrees and bake for 15-20 minutes.
  15. Cabbage fried in sour cream batter with herbs and garlic is ready.
