Cabbage Stewed with Zucchini

A completely simple recipe for stewed cabbage with many vegetables. Juicy, tasty, and very healthy. This dish is without meat, so it will be liked by vegetarians and those who are fasting.

Ingredients

  • White cabbage (small head of cabbage) – 1/4 pcs.
  • Young zucchini – 0.5 pcs.
  • Bulb onions – 1 pc.
  • Carrots – 1 pc.
  • Sweet bell pepper – 0.5 pcs.
  • Garlic – 1 clove
  • Tomato – 1 pc.
  • Chili pepper – to taste
  • Bay leaf – 2 pcs.
  • Salt to taste
  • Vegetable oil – 4 tablespoons
  • Dill greens – for serving

Directions

  1. Prepare the vegetables according to the list for the stewed cabbage with zucchini recipe. Peel and wash vegetables.
  2. Cut the zucchini into strips.
  3. Cut the onion into quarters. Grate carrots.
  4. Finely chop the cabbage, cut the bell pepper into cubes, cut the chili into rings.
  5. Cut the tomato into thin slices.
  6. Heat oil in a frying pan and fry the zucchini for 2 minutes.
  7. Add onions and carrots and cook for another 2-3 minutes.
  8. Put cabbage, sweet and hot peppers with vegetables. Fry, stirring occasionally, for 5 minutes. Salt to taste.
  9. Add the tomato and cook for another 5-10 minutes. The final cooking time depends on the desired softness of the cabbage.
  10. Chop the garlic finely.
  11. Sprinkle vegetables with garlic, add bay leaves. Stir the vegetables and turn off the heat after a minute.
  12. When serving, sprinkle stewed cabbage with zucchini with dill.
