Cut the bacon into finger-thick pieces and fry in a little olive oil for a few minutes. Gradually add the garlic, onions, chilli and a bay leaf. Keep frying, stirring constantly. Add the chopped beef and season with ground caraway and coriander seeds. Fry everything together for a few more minutes.
Add the thyme and the chopped tomatoes and the juice and season with salt and pepper.
Then mix in all the beans and simmer on a low fire for about 10 minutes.
At the end, add a dash of maple syrup and just before serving, add the parsley.
I recommend a fried egg and bread roasted in the oven.
