Carrot Pancakes with Cottage Cheese

A very tasty and healthy dish that will appeal to both adults and children. It is better to serve pancakes on their own with sour cream, honey or berry syrup. Try it!

Servings: 6-8

Ingredients

  • Carrots – 2 Pieces (large)
  • Cottage cheese – 200 Grams (I have a rustic one)
  • Flour – 150 Grams
  • Sugar – 100 Grams
  • Egg – 1 Piece

Directions

  1. Prepare all ingredients.
  2. Grate the carrots on a fine grater.
  3. Add cottage cheese, mashed with a fork, sugar and egg. If you serve pancakes with sweet topping, it is better to reduce the amount of sugar.
  4. Mix everything and add flour in portions.
  5. The mass is quite thick.
  6. You can put the pancakes in the pan using a spoon dipped in water, it is more convenient for me to shape them with my hands. The pancakes should not be too thick, so they will cook more evenly.
  7. Roast the pancakes over a slightly low heat, cover the pan with a lid, until golden brown.
  8. Carrot pancakes with cottage cheese are ready.
