Ingredients

  • 300 grams flour
  • 1 pinch (s) salt
  • 275 g suar
  • 250 g mararine, soft
  • 500 g currants
  • 2 medium egg (s)
  • 0.5 ½ lemon (s), untreated, (zest and juice)
  • 500 g quark (low-fat quark)
  • 1 point pudding powder

Instructions

  1. Process the flour, salt, 150 g sugar and 200 g fat in flakes to make crumbles. Press 2/3 of it into a greased springform pan (26 cm) as a base. Pre-bake in a hot oven (200 ° electric stove) for about 10 minutes. Wash and strip the currants. Spread 2/3 of the fruit on the bottom. Separate eggs. Beat the egg whites until stiff. Mix 50 g fat, 150 g sugar, lemon zest and lemon juice until frothy. Stir in the egg yolks, quark and custard powder. Subject the egg whites. Spread the quark mixture on the berries. Mix the rest of the berries and the crumble, sprinkle over the top. Bake for about 50 minutes at the same temperature. Let cool down.
