Cheesecake in a Glass with Rosemary and Peel

There are tons of delicious desserts that don’t require baking, like this cheesecake in a glass. Some of you will say that this is not a cheesecake at all, but I believe that it is not necessary to do everything according to the written canons. The main thing is that the meaning of the dessert has not changed – it is a combination of cookie crumbs and cheese mass. To make it as tender as possible, I decided to use airy Savoyardi biscuits and tender mascarpone cheese. Rosemary, orange zest, and ginger add original fresh notes to this dessert.
Ingredients
- 8-10 pcs. Savoyard biscuit stick
- 125 g Mascarpone Cheese
- 30 g Butter
- 100 g Culinary Cream (33%)
- 1-2 sprigs Rosemary
- 10 g Ginger root (grated)
- 0.25 pcs. Orange zest (quarters)
- 2 teaspoon Powdered sugar
Directions
- Grate biscuit cookies (8-10 sticks) on a coarse grater, add 30 g of melted butter, and mix well.
- Tear off the leaves from several sprigs of rosemary and chop very finely.
- Whisk the cream (100 g) with 2 teaspoon. powdered sugar until stable peaks appear. Transfer the mascarpone cheese (125 g) to a small bowl and stir with a spatula or spoon, add whipped cream, chopped rosemary, finely grated ginger (10 g), and the zest of a quarter of an orange. Mix well and arrange in the glasses in layers – a layer of cookies, then a layer of cream, the second layer of cookies, and a top layer of cream. Refrigerate for at least an hour. Serve garnished with biscuit crumbs and a sprig of rosemary.
