Cheesecake without Baking, Step by Step Recipe

Not every home has an oven, and everyone wants to make a cake. That is why today we will cook a cheesecake without baking, a very simple and delicious recipe.

Ingredients

  • Cookies 130 grams
  • Milk 40 ml (for base) + 50 ml (for filling)
  • Yogurt 250 ml
  • Curd cheese 250 grams
  • Cream 200 ml (33% fat)
  • Sugar 70 grams
  • Gelatin 15 grams + 6 grams
  • Lemon 30 ml juice
  • Strawberry puree 100 grams

Directions

  1. The first step is to make the base for the cake. Grind cookies into crumbs with our hands.
  2. Then add 40 ml warm milk to the liver, see, you may need a little less or more.
  3. The mixture turns out to be a little sticky and if you squeeze it with your hand, you get a nice lump that does not crumble.
  4. Cover the detachable form 20 centimeters in diameter with parchment paper.
  5. Then we lay out the base and level it well with a spoon, tamp it a little. Cut out the sides for the form from the parchment and carefully insert them, as in the photo. Put the cheesecake base in the refrigerator for 30 minutes.
  6. Soak 15 grams of sheet gelatin in cool water for 10-15 minutes to swell.
  7. Beat the curd cheese, natural yogurt and sugar until smooth.
  8. Squeeze the juice from the lemon, remove the seeds, if they hit. Lemon juice will add a little sourness to the cake.
  9. Add lemon juice to whipped curd cheese and beat well again.
  10. Dissolve the gelatin squeezed from excess water in 50 ml of warm milk.
  11. Then add the milk-gelatinous mass to the curd cheese and beat again.
  12. Whisk the cooled heavy cream at high speed until peaks are stable.
  13. Then gently, using a silicone spatula, mix the curd mass and whipped cream from bottom to top until smooth.
  14. We spread the cheesecake mass on a cookie base, level the top and send it to the refrigerator for 3-4 hours until it solidifies.
  15. You can take any berry or fruit puree, I like strawberry puree the most. I grind fresh strawberries with sugar – and there you have mashed potatoes. Soak 6 grams of gelatin in water, then squeeze it out. Heat a small amount of strawberry puree and dissolve the gelatin in it, then combine with the remaining puree and mix everything well. We spread the strawberry puree on top of the cake and send it back to the refrigerator for 1 hour to solidify the top layer.
  16. Then carefully remove the detachable form, freeing the sides and bottom from the parchment.
  17. We decorate the cake with berries, write congratulatory words on cookies or chocolate. Everything is ready.
