Cheesecake without Baking: a Step by Step Recipe

Ingredients

for the base:

  • Butter 100 g
  • Biscuits 250 g

For filling:

  • Vanilla sugar 3 g
  • Homemade cottage cheese 500 g
  • Gelatin 20 g
  • Milk 450 ml
  • Sugar 200 g

Directions

  1. Remove the oil from the refrigerator beforehand to warm up and soften. Grind the cookies until fine crumbs. Most likely this can be done in a blender, but you can also manually use the most ordinary mortar.
  2. Combine sand crumbs and softened butter. Rub the butter and sand crumbs thoroughly with a spoon, the oil should be evenly distributed throughout the entire volume. If the mass is poorly mixed, then the base will crumble strongly. Then we spread this mass on the bottom of the form. Thoroughly tamp with a spoon or the bottom of a glass to get a flat and dense enough base about a centimeter thick.
  3. Add sugar to cottage cheese, pour a glass of milk, add vanilla sugar. Mix the cheese thoroughly with a blender. If you don’t have a blender, first grind the cheese and sugar by hand with a spoon, and then add milk.
  4. Pour the gelatin into a dry saucepan. Pour in a glass of cold milk in a thin stream. Stir immediately to avoid clumping. Put on the stove, over medium heat, bring the mixture to a boil, stirring occasionally, and remove from heat immediately. In this case, all the gelatin should dissolve.
  5. Pour the dissolved and slightly cooled gelatin into the curd mass in a thin stream. Mix thoroughly until smooth. It is advisable to use a mixer or blender since whipping the curd mass becomes airier. To give the cheesecake a special flavor, you can add the zest of one lemon or orange to the curd mass. Pour the curd mass over the sand base. Then we put it in the refrigerator for four hours until the curd mass solidifies completely.
