Cherry Strudel

With a minimum of ingredients and maximum pleasure – this is a real cherry strudel. It is very exciting to prepare stretched dough for strudel, the main thing is to start and not be afraid.

Ingredients

For the dough

  • Flour – 160 g (+ 20-30 g for kneading)
  • Warm water (~ 30 ° С) – 120 ml
  • Vegetable oil – 20 g
  • Salt – 1 pinch
  • Apple cider vinegar or lemon juice – 1/3 teaspoon.

For filling

  • Pitted cherries – 400 g
  • Sugar – 50 g
  • Vanilla sugar – 1 teaspoon
  • Corn starch – 20 g
  • Breadcrumbs or chopped nuts – 40 g
  • Butter – 50 g

For decoration

  • Powdered sugar

Directions

  1. Prepare food for the test. If you have first-grade flour with whole gluten, use this combination: 100 g premium flour and 60 g first-grade flour. If not, then take regular wheat flour.
  2. Prepare products for the filling.
  3. Combine the starch, sugar and vanilla sugar. Stir everything with cherries. Put on low heat. Boil. Boil for one to two minutes, until the starch begins to thicken. Cool down.
  4. Add salt and lemon juice (or vinegar) to the water.
    Make a well in the flour and pour water and vegetable oil into it.
  5. Knead the dough
  6. Leave for an hour in a warm place.
  7. Melt the butter.
    Spread out a cotton towel or tablecloth, sprinkle with flour. Also, dust the dough with flour.
  8. Throw the dough with force several times on the table. After that, first, stretch the middle with the back of your hand, then start pulling in different directions, giving the shape of a rectangle.
  9. The pattern on the towel should be visible through the dough. Cut off the two thick side edges (from which and to which you will fold) with a pizza knife. Do not cut the top and bottom edges yet.
  10. Grease the dough with melted butter.
  11. Sprinkle with breadcrumbs or nuts.
    Put the filling on one edge.
  12. Roll into a roll with a towel.
  13. Fasten at the ends by tearing off the thick parts of the dough.
  14. Brush with the rest of the butter.
  15. Bake the cherry strudel in a preheated oven at 180 ° C for about half an hour, until golden brown.
  16. Sprinkle the finished cherry strudel with icing sugar.
    Allow to cool slightly and you can eat.
