Chia Pudding with Berries and Coconut Chips

An amazing dish made from the healthiest chia seeds. The seeds are soaked in milk for a period of 8 hours to 1 week. That is, if you spend a few minutes cooking, you will have a delicious dessert in the fridge that has a relatively long shelf life.

Servings: 4

Ingredients

  • 1% fat milk – 500 ml
  • Chia seeds – 0.5 cups (250 ml volume)
  • Maple syrup – 2 tbsp
  • Vanilla extract – 1.5 teaspoon
  • Salt – 0.25 teaspoon

  • For filing:
  • Berries (raspberries, blueberries, blackberries, chopped strawberries) – 350 g
  • Coconut chips – 0.25 cups
  • Milk to taste

Directions

  1. Combine milk with chia seeds, maple syrup, vanilla extract and salt in a large container. To stir thoroughly.
  2. Leave on for 15 minutes. Then mix again, breaking the lumps.
  3. Cover with a lid and refrigerate for 8 hours (overnight). Can be stored for up to 1 week.
  4. Before serving, remove the pudding from the refrigerator, dilute with milk to the desired consistency. Top with berries and coconut chips.
