  • 1 chicken (roast chicken - approx. .2 kg), young
  • 2 lemon (s), juice it
  • 4 tablespoon olive oil
  • 12 sage leaves
  • 3 chilli pepper (s), dried, crushed
  • salt and pepper

Instructions

  1. Cut the chicken lengthways in the middle of the back, then wash and pat dry. Place it breast up on a piece of aluminum foil and press flat. Whisk together lemon juice, oil, salt and pepper. Cut the sage leaves into fine strips and stir into the marinade with the chilli pieces. Brush the chicken all around with the marinade. Wrap in aluminum foil and leave to stand in the refrigerator for about 2 hours.
  2. Preheat the oven to 200 ° C.
  3. Place the chicken on a baking sheet, open the foil and fold it to the side so that the marinade can drain out better.
  4. Put in the oven and fry for about 1 1/2 hours until crispy.
