Chicken Stewed in Tomato Sauce with Dried Apricots, Ginger and Curry

Chicken thighs with dried apricots and curry will be a real boon for those who love spicy and savory dishes. According to this recipe, chicken meat is prepared quite simply and for a short time – first, the chicken is fried, and then stewed in a sauce of canned tomatoes, curry, garlic, ginger, and dried apricots. Such a dish can be prepared by a novice cook.

Ingredients
Chicken thighs (or legs) – 3 pcs. (400 g)
Canned tomatoes in their own juice (in pieces) – 200 g
Dried apricots – 5 pcs.
Fresh ginger (root) – 15 g
Garlic – 1 clove
Ground coriander – 1/2 teaspoon
Ground curry – 1/2 teaspoon
Vegetable oil – 1 tbsp
Drinking water – 100 ml
For the filling (optional):
Fresh dill – to taste
Directions
Put chicken thighs in a frying pan preheated with vegetable oil and fry on both sides over high heat for 5-7 minutes, until golden brown. Then place the chicken on a plate and cover.
Peel the garlic, pass through a press, and put in the pan in which the chicken thighs were fried. Sauté the garlic over low heat for 1 minute, stirring occasionally.
Place dried apricots in the pan.
Peel the ginger, grate and add to the pan with dried apricots and garlic.
Add tomatoes to your own juice.
Stir and simmer for 7 minutes. Add curry, coriander, salt, and pepper and stir.
Return the fried chicken to the pan and add the water. Cover the pan with a lid and simmer the chicken thighs and dried apricots in tomato sauce over low heat for 30 minutes. During this time, turn the hips 2-3 times.
Chicken with dried apricots, ginger, and curry, in tomato sauce, ready.
Place the chicken thighs on plates, garnish with fresh dill if desired, and serve.
