Ingredients
- 100 g spinach leaves, youn, fresh
- 2 chicory
- 4 medium clementine (s)
- 50 g cheese, (Mancheo)
- 4 stalks mint
- 2 tablespoon vinegar, (sherry vinegar)
- 2 tablespoon olive oil
- 1 teaspoon honey

- Wash and roughly chop the chicory. Wash the spinach as well, dry it well and roughly cut or pluck it. Put both in a bowl. Add the mint finely chopped. Grate the cheese to taste and add to the salad.
- Fillet the clementines and squeeze the juice from the leftovers into a bowl. Add the sherry vinegar, oil and honey to the juice. Season to taste. I use pepper, salt, and thyme. Mix well and add to the salad just before serving.
