Chocolate Biscuit Roll with Chocolate Glaze and Peach Jam

Today we are preparing a delicious and easy-to-prepare chocolate roll based on the Prague cake. Biscuit roll with chocolate cream is quicker and easier to prepare than cake, and it tastes just as good.

Ingredients

For the dough:

  • Eggs – 3 pcs.
  • Sugar – 87 g
  • Butter (melted) – 23 g
  • Flour – 70 g
  • Cocoa – 14 g
  • Salt – 2 g

For the cream:

  • Condensed milk – 70 g
  • Water – 30 ml
  • Yolk – 1 pc.
  • Butter (softened) – 140 g
  • Cocoa – 5 g
  • Vanilla sugar – 4 g
  • Peach jam – 30 g

For glaze:

  • Dark chocolate – 56 g
  • Butter – 37 g
  • Honey – 15 g

Instructions

  1. Beat eggs with salt for 2 minutes, until foam appears. Add sugar. Beat eggs with sugar for 15 minutes! Do not beat less! Preheat the oven to 180 degrees (top-bottom mode). Add the sifted cocoa flour in two steps. Gently, from bottom to top, mix the dough with a spatula.
  2. Add melted (cooled) butter. Pour it gradually along the side of the bowl, stirring the biscuit dough. Pour the dough onto a baking sheet covered with baking paper, distribute evenly.
  3. We bake the biscuit in a preheated oven at 180 degrees for 10 minutes. We take out the biscuit cake from the oven, turn it over on a clean towel, remove the paper. We roll the hot cake together with a towel into a roll. Leave to cool.
  4. Preparing the cream. To do this, mix the condensed milk, yolk, vanilla sugar, and water. We boil over low heat, stirring constantly, until the consistency of condensed milk. We filter through a fine sieve and cool. Beat soft butter until creamy. Add chilled cream and whisk everything.
    Add cocoa to the cream, mix.
  5. We collect the roll. We unfold the biscuit roll and apply a thin layer of jam on the cake (I have peach, you can try other tastes). Apply the cream on top. Roll up the biscuit roll with chocolate cream and jam. We send the chocolate roll to the refrigerator.
  6. Cooking the icing: melt butter, dark chocolate, and honey (all products at room temperature) in a water bath or the microwave. Stir until smooth. Pour the roll with chocolate icing.
  7. We send the chocolate roll to the refrigerator to cool. Then you can sprinkle it with powdered sugar.
