Ingredients
- 2 cod fillet (s) (00g each)
- 1 tablespoon lemon juice
- 250 ml white wine, dry
- 1 garlic (cloves)
- 2 tablespoon butter
- 1 cup sweet cream
- 2 egg (s), separated
- 3 small apples, mildly sour
- 1 onion (s)
- 150 g ham, raw
- 150 g North Sea shrimps
- 100 g cheese, Emmentaler, rated
- 1 teaspoon paprika powder, noble sweet
- salt and pepper

- Wash the cod fillets, pat dry, season with salt and place in a bowl. Drizzle with the lemon juice and pour some white wine on top. Cover and let stand for about 2 hours. Halve the garlic clove, rub an ovenproof dish with it and grease with the butter. Put in the cod fillets, pour the rest of the wine on top. Beat the cream and egg whites until stiff. Peel, quarter, core and dice the apples, finely dice the onion and ham. Fold the diced apple, onion and ham with the North Sea shrimps, egg yolks and cheese into the cream. Season to taste with paprika, salt and pepper. Finally fold in the egg yolks. Spread the mixture over the cod fillets. Bake in the preheated oven at 225 ° C on the middle rack for 25 to 30 minutes.
