Cold Soup “Fake Gazpacho”

Soup prepared according to the principle of gazpacho. Of course, the taste is strange, for an amateur. But in the heat it is perfectly absorbed. Minimum calories, but still gives satiety, which allows you to live until dinner. In general, for those who want to keep the figure!

Ingredients

  • Cucumber – 1 pc.
  • Tomatoes – 2 pcs.
  • Bulgarian pepper – 1 pc.
  • Zucchini – 1 pc.
  • Green onions (with a bulb) – 2 pcs.
  • Gray or rye bread – 2 slices
  • Egg – 1 pc.
  • Olive oil – 2-3 tablespoon.
  • Wine vinegar – to taste
  • Salt

Directions

  1. My vegetables, cut into pieces.
  2. Grind vegetables in a blender until smooth. Salt, add a little wine or apple cider vinegar. We dilute the soup to a consistency that suits you, preferably with vegetable broth, or water. Cool in the refrigerator.
  3. Cut the bread into cubes. Fry on a drop of vegetable oil with the addition of oregano or other seasoning to taste. Add some salt.
  4. Pour soup into each plate, put half a boiled egg and a few croutons. Add a little olive oil.
