Gazpacho

This cold soup is good for hot weather or when you want something unusual. Toasted bread is a great addition to cold gazpacho.

Servings: 4

Ingredients

  • Red onion (chopped) – 1/3 cup
  • Capers – 2 tbsp
  • Tomatoes (chopped) – 2 cups
  • Cucumber (chopped) – 1/2 cup
  • Celery (chopped) – 1/2 cup
  • Red bell pepper (chopped) – 1/2 cup
  • Spicy tomato sauce – 150 g
  • Parsley (chopped) – 1/4 cup
  • Red wine vinegar – 1 tbsp
  • Worcester sauce – 1 tbsp
  • Paprika – 1/2 teaspoon.
  • Salt – 1/2 teaspoon.
  • Tabasco sauce – 1/2 teaspoon
  • Ice cubes – 2 glasses

Directions

  1. Grind the onion and capers in a blender. Add tomatoes, cucumber, celery and peppers, chop well. Transfer to a large bowl.
  2. Add the spicy tomato sauce, parsley, vinegar, Worcestershire sauce, paprika, salt, and tabasco to the bowl of vegetable mixture. Add ice and leave to cool Serve with croutons or toast.
