Ingredients

  • 60 g semolina, (durum wheat semolina)
  • 1 egg (s)
  • salt
  • nutmeg

Also: for yellow marbles

  • 30 g sour cream
  • 1 tablespoon parmesan, grated, up to 2
  • turmeric
  • 30 g semolina, (durum wheat semolina)

Also: for red marbles

  • 35 g tomato paste
  • 30 g semolina, (durum wheat semolina)

Also: for orange marbles

  • 30 g ajvar, mild
  • 30 g semolina, (durum wheat semolina)

Instructions

  1. First mix the ingredients for the base mixture well, then divide the dough into thirds. The ingredients for the different colored marbles are each intended for one third of the dough - if you want all marbles in one color, you have to triple the additional ingredients for the one selected color!
  2. Mix or knead each third of the dough well with the additional ingredients. The result is quite firm dough, so work it through really thoroughly, don`t just add more liquid or something. Now let the finished dough stand for about 20 minutes to swell.
  3. In the meantime, bring salted water to the boil in a very large saucepan. Now use a ball cutter (hold it well in the boiling water before taking the dough!) Tinker the masses into marbles - and then simmer for about 15-17 minutes. For me it was 12 marbles of each color - so perfect for 4 servings. If you do not take the shaping too closely, the ball cutter can do it very quickly - then everyone will be finished together afterwards. Since these masses tend to make marbles that are firm to the bite, they can withstand 20 minutes in a boiling bath without any problems.
  4. Note: Depending on the color of the planned soup, this will certainly also work with other coloring ingredients B. wild garlic paste or other herbal pastes for green marbles (possibly also half-half herbal paste + sour cream) or beetroot puree for pink marbles or whatever you like. The marbles also go great in a colorful vegetable soup for children - especially if you make marbles from carrots, kohlrabi, zucchini, etc. using a ball cutter and maybe add sugar peas and vegetable corn.
