Ingredients

  • 1 onion (s)
  • 1 bell pepper (s)
  • 1 avocado (s)
  • 3 small tomato (s)
  • 150 g couscous
  • Parsley, fresh
  • Mint, fresh
  • olive oil
  • salt and pepper
  • Lemon juice, or lime juice
  • water

Instructions

  1. Pour approx. 1.5 times the amount of hot water over the couscous and let it soak for 10 minutes.
  2. Finely dice the onion. Core the peppers, tomatoes and avocado and cut into cubes of the same size. Chop the parsley and mint a little, but not too finely.
  3. Mix all ingredients together, pour in a little oil and season with salt and pepper and lemon juice. Let something go.
  4. Tip: I always try to vary the color of the ingredients a bit, i. H. Avocado is already light green and then e.g., use red or yellow peppers and yellow or orange tomatoes. I also like to take red onions, then the dark green herbs, or maybe, if you like, a small red chilli pepper - then it will also be a feast for the eyes.
