Ingredients

  • 200 g flour
  • 2 teaspoons baking soda
  • 1 teaspoon Baking powder
  • 0.5 teaspoon ½ cinnamon
  • 150 ml soy milk (soy drink)
  • 100 g cranberries, dried
  • 100 g chocolate, lactose-free, dark, chopped
  • 100 g hazelnuts, chopped
  • 80 g suar
  • 100 g applesauce, unsweetened
  • 70 ml oil, neutral
  • 0.5 teaspoon ½ salt
  • 50 g oatmeal

Instructions

  1. Mix the soy milk, applesauce, oil and oatmeal and let soak for 5-10 minutes. In another bowl, mix the flour, baking powder, baking soda, cinnamon, sugar and salt together. Stir in the soaked oatmeal mixture, cranberries, nuts and chocolate. Possibly add more soy milk if the batter is too firm.
  2. Fill into muffin cups and bake at 200 ° C for 20-25 minutes.
