Ingredients

For the ground:

  • 200 g brown rice
  • 60 g cheese, rated
  • 1 egg (s)

For the filling:

  • 6 tomato (s), plum tomatoes (optionally from the can)
  • 6 cloves garlic
  • 100 g cheese, oat cheese (optionally sheep cheese)
  • 3 egg (s)
  • 3 tablespoon milk
  • thyme
  • salt
  • Pepper, freshly ground

Instructions

  1. For the crispy rice base, prepare the rice according to the instructions on the package and let it swell (you can also make it the day before), pour off any excess liquid.
  2. After cooling, mix with the cheese and egg and pour into a carefully greased quiche dish approx. 24 cm in diameter, spreading over the bottom and around the edge. Bake at 200 ° C for 15 minutes so that the base becomes firm.
  3. Then spread the peeled tomatoes (and any other pre-cooked vegetables), the garlic cloves, the thyme and the goat cheese on the floor. Thoroughly whisk the milk with the eggs and spread over the vegetables. Season generously with pepper and salt and bake in the oven at 180 ° C for about an hour.
  4. For very dry vegetables, e.g., broccoli, it is advisable to cover the individual florets with a few slices of mozzarella.
