Cupcake with Cherry and White Chocolate

Cupcakes with cherries and chocolate are very elegant and tasty. For example, this delicious white chocolate and cherry muffin can be served instead of cake or pie.

Ingredients

  • Butter (softened) – 230 g
  • Powdered sugar – 230 g
  • Baking powder – 1 teaspoon.
  • Chicken eggs – 4 pcs.
  • Vanilla sugar – 1 teaspoon
  • Wheat flour – 230 g + 2 tbsp
  • Fresh cherries (pitted) – 380 g
  • White chocolate (broken) – 180g + 100g
  • Mascarpone cheese – 140 g
  • White chocolate for decoration (shavings) optional

Directions

  1. Preheat the oven to 180 degrees. Cover the cake pan (about 1 kg) with parchment.
  2. In a large bowl, beat the powdered sugar, vanilla sugar and butter until fluffy. Then add eggs (one at a time) and gradually add flour mixed with baking powder. Knead the dough until smooth.
  3. Roll the cherries in a little flour. Combine half the cherries and 90 g of white chocolate and add to the dough. Mix well.
  4. Put the dough in the prepared mold and sprinkle with the remaining cherries and 90 g of chocolate on top, press lightly into the dough. Bake for about 1 hour, until tender (check readiness with a toothpick or other wooden stick. After piercing the cake with a stick, it should remain clean).
  5. Remove the cake from the oven, let it stand at room temperature for about 5 minutes, then remove the product from the mold and leave it on the wire rack until it is completely cooled.
  6. Let the mascarpone stand at room temperature for about 15-20 minutes. Melt the remaining 100 g of chocolate in a water bath. Quickly add 1 tablespoon of mascarpone to the chocolate, mix well, then add the rest of the cheese and beat. Brush the cake with this creamy chocolate mixture. Decorate the white chocolate cupcake with chocolate chips.
