Curd Cake with Raisins

I bring to your attention a simple and proven recipe for making a delicious curd cake with raisins! The cupcake turns out to be tender, airy, fragrant and very, very tasty, just like in childhood! Try it yourself!

Ingredients

  • Cottage cheese 5% – 200 g
  • Butter – 50 g
  • Chicken eggs – 2 pcs.
  • Sugar – 120 g
  • Wheat flour – 200 g
  • Raisins – to taste
  • Vanillin – 1 sachet
  • Baking powder – 1 teaspoon
  • Soda – 1 pinch

Directions

  1. Grind the softened butter and half the sugar well. For this purpose, I used a whisk. I poured a bag of vanillin into the sugar in advance.
  2. Add cottage cheese to the resulting mass and beat everything again with a whisk until smooth. (If you have homemade cottage cheese, then you should first grind it through a sieve.)
  3. In a separate bowl, beat well two chicken eggs with the remaining half of the sugar. Add curd-butter mass to this mixture. Do not forget to mix everything well with a spatula.
  4. Sift the flour with baking powder, add the baking soda on the tip of a knife and gently knead the dough with a spatula (top to bottom, clockwise). Add the raisins, distribute them evenly in the dough.
  5. Put the finished dough into a prepared baking dish and place in the oven preheated to 170 degrees. Bake the raisin curd cake for about 60 minutes.
  6. Cool the finished curd cake with raisins, remove from the mold, sprinkle with powdered sugar and serve!
