Ingredients
- 160 g wheat (emmer rice) or spelled rice or bulur
- 100 g rocket
- 50 g sheep cheese
- 4 tomato (s)
- 1 onion (s), red
- 0.5 ½ cucumber (s)
- 4 tablespoon olive oil
- 4 tablespoon balsamic vinegar, darker
- 3 tablespoon parsley, chopped
- salt and pepper

- Prepare the emmer rice according to the instructions on the packet. In the meantime, wash the tomatoes, onion and cucumber and cut into small cubes.
- Prepare a dressing with olive oil, vinegar, salt, pepper and herbs. Mix with the vegetables and let it steep.
- Strain the emmer rice after the cooking time, let it cool and mix it with the tomato and cucumber salsa and the finely chopped rocket. At the end, crumble the sheep`s cheese over the salad.
