Filled Coconut Cookies

These delicious coconut cookies stuffed with cream and jam are perfect for a festive table.
Ingredients
For cookies:
- Flour – 225 g
- Baking powder – 1 teaspoon.
- Powdered custard (store) – 30 g
- Coconut flakes – 50 g
- Butter – 125 g
- Sugar – 100 g
- Milk – 60 g
For the cream:
- Butter (softened) – 90 g
- Powdered sugar – 100 g
- Milk – 3 teaspoon.
- Coconut flakes – 2 tbsp
- Raspberry jam – 110 g
How to make filled coconut cookies:
Directions
- Turn on the oven to preheat to 180 degrees. Line three large baking sheets with parchment.
- Prepare cookies. In a large bowl, combine flour, baking powder, custard powder, and coconut.
- In a separate bowl, beat the butter and sugar until fluffy. Whisking on low speed, gradually add milk and dry ingredients. Form 40 small balls from the resulting dough and place them on prepared baking sheets at a distance of 2.5 from each other. Press down slightly with a fork. Place the baking sheets in a preheated oven, bake the cookies for 15-20 minutes, until golden brown.
- Take the cookies out of the oven and let them cool slightly. Transfer to a wire rack and allow to cool completely.
- Prepare the cream. Beat butter with icing sugar until fluffy. Add milk and coconut.
- Grease half of the cookies with cream, and the other half with jam, combine the halves and the coconut cookies with filling are ready.
