Lemon Filled Cookies

The recipe for this cookie is a godsend for those who love aromatic pastries with lemon sourness.

Ingredients

For the dough:

  • Butter margarine (or butter) – 100 g
  • Wheat flour, premium grade – 190 g (1.5 cups)
  • Milk (or water) – 50 ml
  • Dry fast-acting yeast – 5 g
  • Salt – 1 pinch

For filling:

  • Lemon – 1 pc. (120 g)
  • Sugar – ½ cup (100 g)
  • Potato starch – 1 tbsp (22 g)

Directions

  1. We prepare the necessary products for making biscuits with lemon filling.
    From the amount of products given in the recipe, 400 g of cookies are obtained.
  2. Sift flour into a bowl.
  3. Mix sifted flour with dry fast-acting yeast and a pinch of salt.
  4. Grate 100 g of butter margarine or butter.
  5. Add grated margarine to a bowl with sifted flour, grind flour and margarine into crumbs.
  6. We collect the crumb in a bowl with a mound. Having made a depression in the center of the mound, pour warm milk (or warm water) into it.
  7. Knead the dough quickly.
  8. Having separated 1/3 of the dough, we roll it into a bun. The remaining 2/3 of the dough is also rolled into a ball.
  9. Roll out most of the dough into a thin layer about 2 mm thick. Conveniently roll out directly on parchment paper to fit a baking sheet.
    Then, together with the parchment, we transfer the layer of dough to a baking sheet.
  10. We also roll out a smaller ball of dough on parchment in a layer 2 mm thick. Cut strips 1 cm wide with a sharp knife (we expect enough for the sides of the pie and for decoration in the form of a lattice) and various figures into small notches for cookies.
  11. Cooking the filling. Wash the lemon, pour over with boiling water. Then cut the lemon into slices, remove the seeds.
  12. Pieces of lemon together with the skin are passed through a meat grinder. Add 100 g of sugar to the crushed lemon.
  13. Add 1 tablespoon of potato starch. Mix all the ingredients of the filling.
    We turn on the oven to warm up to 200 ° C.
  14. Along the edges of the layer of dough, which we have placed in a baking dish, put strips cut from the dough in the form of sides. Now we spread the prepared lemon filling on a layer of dough.
  15. We decorate the pie in the form of a lattice with strips of dough. In each window of the lattice we place the figures cut earlier from the dough.
  16. We send the baking sheet into an oven preheated to 200 ° C. We bake until golden brown for 15-20 minutes.
  17. We take the ruddy cookies with a lemon layer from the oven, cut into squares and serve with tea.
