Weigh the flour, water, sugar, salt, yeast and olive oil into a large bowl and knead. Do not choose a bowl that is too small, the dough increases its volume very much when it rises. Cover the bowl, preferably close it with the lid, and let rise in a warm place for about 45 minutes. Knead again with the mixer and dough hook and let rise for another 20 minutes.
Spread the dough on 2 baking sheets with baking paper. Don`t be alarmed, it`s very soft. Oil your fingers a little and press the dough flat to a height of about 1.5 cm. Brush with water, generously distribute the black cumin and sesame seeds on both breads.
Preheat the stove to 250 degrees (220 degrees hot air). Wait until the dough has clearly reached the baking sheet and then bake for about 15-25 minutes until the bread is golden brown.
