Put the sugar and yeast in a small bowl. Mix with the warm water until the yeast dissolves. Set aside and let rise for about 10 minutes until bubbles form on the surface. Put the flour in a large bowl, make a well in the middle, add the ghee / butter, salt and the yeast. Mix to a smooth batter and add more water if necessary. Knead the dough on a floured work surface and leave it covered in a warm place for approx. 1 ½ hours.
Knead the dough again on a floured work surface for 6 minutes, then divide into 6-8 equal portions and shape into individual balls. Flatten the balls to a thickness of approx. 1 cm with a diameter of 12 cm.
Preheat the grill. Place the flat bread on a greased aluminum foil and bake for 7-10 minutes, turning and brushing with ghee / butter and sprinkling with black cumin.
