Flower Buns with Meat Patties Ingredients

For the dough:

  • Flour – 250 g + for working with dough
  • Milk – 100 ml
  • Egg – 1 pc.
  • Dry yeast – 1 teaspoon
  • Sugar – 1 tbsp
  • Vegetable oil – 2-3 tbsp
  • Salt – 1 pinch

For cutlets:

  • Minced meat – 300 g
  • Bulb onions – 1 pc.
  • Bread crumbs – 3 tbsp
  • Ground coriander – 0.5 teaspoon
  • Salt to taste
  • Ground black pepper – to taste
  • Yolk – for greasing the dough

Flower Buns with Meat Patties Instructions

  1. First, let’s knead the dough.
    We heat the milk to a temperature of 37 degrees.

  2. Sift the flour into a larger cup.
    We activate the yeast: we make a depression in the flour and add warm milk, dry yeast and sugar there.
  3. Stir the milk with yeast and sugar and let stand for 5 minutes for the dough to come up.
  4. Add salt and egg. We knead the dough.
  5. When the dough is collected in a ball, add vegetable oil.
  6. Knead for a few minutes, the dough should be soft and not stick to your hands.
    Round the dough, put it in a bowl, cover with a foil and let it stand in a warm place for 40-60 minutes, to rise.
  7. During this time, we will prepare the filling. These will be small cutlets.
    Peel the onion.
  8. Rub the onion on a coarse grater
  9. Mix onion with breadcrumbs, let stand for a couple of minutes, so that the breadcrumbs are soaked in onion juice.
  10. Add salt, pepper and coriander to the onion with breadcrumbs.
  11. We also send minced meat there.
  12. We mix.
    Form 11 small round flat cutlets from minced meat.
  13. Quickly fry the cutlets in a little vegetable oil on both sides. Our task is to seal all juices.
  14. The dough is perfectly spaced, knead it and divide it into 11 pieces of 45 grams each (according to the number of cutlets). Round each part of the dough and let it lie on the table under the plastic foil (10-15 minutes).
  15. Then we roll out the dough bun into a small cake, dusting the table with flour if necessary.
    We cut the cake to make 9 petals.
  16. We form a flower, overlapping petals overlapping each other.
  17. We do this with all the dough balls, laying them out on a baking sheet covered with parchment.
    Put cutlets in the center of each dough piece.

  18. While the oven is well warmed up to 200 degrees, let the flower buns with meat cutlets stand on the table under the film for 15-20 minutes, let the dough rise slightly (settle).
    Lubricate the dough with yolk.
  19. We bake buns with cutlets at 200 degrees for 15 minutes.
