Gratinated Honey Goat Cheese on Lettuce

Ingredients

For the salad:

1 lettuce (s)
250 g cherry tomato (s)
0.5 ½ cucumber (s)
1 avocado (s), ripe

For the dressing:

4 teaspoons honey, clearer
4 sprig (s) thyme

Instructions

For the salad, wash the lettuce leaves and pluck them into bite-sized pieces. Cut the tomatoes into wedges. Cut the cucumber into thin slices. Halve the avocado lengthways, remove the stone and cut the pulp into wedges. Arrange the ingredients on 4 plates.
For the dressing, finely dice the shallots and finely chop the thyme. Mix the honey, vinegar and olive oil together, season to taste and stir in the shallots and thyme. Lightly coat the salad with a little dressing. Add the rest of the dressing.
Preheat the oven to 220 ° top and bottom heat or 200 ° convection. Line a baking sheet with parchment paper. Cut the goat cheese into 4 slices and place on the baking paper. Brush each slice with 1 teaspoon of honey and top with 1 sprig of thyme. Bake in the oven for 3 minutes until the cheese begins to melt.
Place the cheese on the salad and serve immediately.
