Ingredients

  • 1 packet dry yeast or cube fresh yeast
  • 2 tablespoon agave syrup, alternatively honey or maple syrup
  • 200 g spinach leaves, fresh or frozen - provided it does not contain any additives
  • 350 g wheat flour, or spelled flour - whole rain or normal flour
  • 2 tablespoon rapeseed oil
  • 2 teaspoons salt

Instructions

  1. As a morning power cucumber or for the party buffet, this pithy green spinach bread is simply delicious! It can be baked as normal or whole grain bread. It`s also vegan.
  2. 1. Mix the yeast in a bowl with the agave syrup to a creamy mass.
  3. 2. If using fresh spinach, puree it.
  4. 3. Put the flour and salt in a bowl, make a well in the middle, pour in the oil and 100 ml of lukewarm water, add the spinach and yeast mixture and mix everything thoroughly with the dough hook of the mixer.
  5. 4. Then knead the dough vigorously with your hands on a floured work surface for a few minutes and then let it rise for about 30 minutes in a bowl covered with a tea towel.
  6. 5. Then knead again on a floured work surface and work in the green ingredients (kernels, seeds, pistachios, etc.).
  7. 6. Shape the dough into an elongated loaf of bread and - if no silicone mold is used, place it in a lightly greased and floured loaf pan (approx. 1 liter content) and bake the bread at 200 degrees, circulating air 180 degrees, for 35 - 40 minutes to bake. At the end, you may want to do the chopsticks test to check whether the bread is properly baked through.
  8. 7. Let the bread cool down, cut it open - and then enjoy your meal!
  9. Note: Green bread ingredients such as pistachios or pumpkin seeds can be added as an option.
