Cook the potatoes in plenty of water for about 20-30 minutes, depending on whether you still like them a bit chunky or not.
Meanwhile, peel and quarter the apples and remove the core. Put in a saucepan and simmer with a sip of water, 1 tablespoon of sugar and a squeeze of lemon juice with the lid closed. Stir every now and then.
When the potatoes are cooked, drain, peel and return to the pot. Pound well with a potato masher. Mash the apples and add to the potatoes. Add a dash of milk and a dollop of butter. Season to taste with salt, pepper and a little nutmeg. If necessary, a dash of lemon juice can also be added here. Stir vigorously again.
Fried black pudding and / or liver sausage, onions with bacon or simply a fried egg go very well with it. Sliced meat sausage with a little mustard is also recommended.
