Ingredients
- 1 kg potato (s), floury cooking
- 1 bay leaf
- salt
- nutmeg
- 1 kg apples, sour
- 250 ml apple juice
- 1 lemon (s), including the juice
- 2 tablespoon sugar
- 3 onion (s), cut into rings
- 1 tablespoon oil
- 250 ml milk
- 50 g butter
- 2 tablespoon breadcrumbs
- 200 g black puddin, cut into slices
- 0.5 ½ bunch parsley, chopped
- Fat, for the shape

- Wash and peel the potatoes and cook with the bay leaf in salted water for about 20 minutes. Peel, quarter, core and dice apples. Put the apple juice with the juice of the lemon and the sugar on top and let the apple cubes simmer in it for 10 minutes.
- Preheat the oven to 200 degrees.
- Peel and cut the onion into rings and fry in hot oil. Heat the milk with half the butter. Drain the potatoes and add the milk and mash. Season with salt and nutmeg. Melt the remaining butter and stir in the breadcrumbs.
- Layer the mashed potatoes and apple compote in a greased baking dish. Place the black pudding on top and spread the onion rings over it. Then pour the butter with the breadcrumbs over the whole thing and bake in the oven at 200 degrees for 25 minutes. To serve, sprinkle with the chopped parsley.
