Herring Appetizer with Sour Cream, Sweet Pepper, Pickled Cucumber and Carrots

Herring appetizer with sour cream, bell peppers, carrots and pickled cucumbers will surely attract the attention of guests. Such an appetizer turns out to be very interesting not only in appearance, but also in taste. The combination of tender herring with juicy vegetables and light sour cream makes the dish spicy, bright and very original!

Servings: 5

Ingredients

  • Herring fillet – 2 pcs. (270 g)
  • Sour cream – 200 g
  • Bulgarian red pepper – 150 g
  • Pickled cucumber – 140 g
  • Carrots – 100 g
  • Red onion – 50 g
  • Egg – 1 pc.
  • Gelatin – 15 g
  • Lemon juice – 1 tbsp
  • Fresh dill – 2-3 branches
  • Fresh parsley – 2-3 sprigs
  • Ground black pepper – to taste
  • Salt to taste

Directions

  1. We prepare all the necessary products. During the cooking process, you will also need cling film.
  2. Pour carrots with water and boil until tender (20 minutes after boiling water). We take out the carrots from the broth and let it cool.
  3. Boil the egg hard-boiled (8 minutes after boiling water), fill it with cold water and leave to cool.
  4. Pour gelatin with 50 ml of water and leave for 10 minutes.
  5. Boil water in a saucepan and place a heat-resistant bowl with swollen gelatin in boiling water. We warm up the gelatin with water, bring it to complete dissolution, stirring constantly.
  6. Add gelatin to sour cream, mix thoroughly.
  7. We clean the bell pepper from seeds, remove the stalk. Cut the pulp of the pepper into cubes.
  8. We wash and grind the greens.
  9. Peel the onions and cut into cubes.
  10. Peel the egg and cut into cubes.Peel the carrots and cut into cubes.
  11. Put all the chopped ingredients in a bowl with sour cream with gelatin, salt, pepper and add lemon juice.
  12. We mix.
  13. Put the herring fillet with the inside side up on the cling film.
  14. We spread half of the sour cream and vegetable mass.
  15. Cut the pickled cucumber lengthwise into thin slices.
  16. Put the cucumber slices on the sour cream and vegetable mass.
  17. Put the remaining mass on top.
  18. Cover with the second herring fillet, placing it inside down.
  19. Tightly wrap the stuffed herring with several layers of cling film. We send it to the refrigerator for several hours, and preferably at night.
  20. Before serving, free the herring appetizer from cling film and cut into slices 1-1.5 cm thick.
  21. Herring appetizer with sour cream, bell pepper, carrots and pickled cucumber is ready.
