Herring Appetizer

Herring appetizer is an Estonian dish called terendis or tarretis, light sour cream aspic with salted herring, onions and fresh cucumbers.

Servings: 2


  • Salted herring fillet – 1 pc.
  • Green onions – 2-3 pcs.
  • Fresh cucumbers – 2 pcs.
  • Sour cream – 250 g
  • Water – 100 ml
  • Instant gelatin – 1 teaspoon
  • Salt to taste
  • Ground black pepper – to taste


  1. Ingredients for making herring snacks.
  2. Dissolve gelatin in water and leave for 15 minutes to swell. Then put in a water bath and, stirring, bring the gelatin until completely dissolved.
  3. Finely chop the green onion.
  4. Peel the cucumbers and cut into cubes.
  5. Cut the skin and bones of the herring fillet into cubes.
  6. Mix everything.
  7. Mix sour cream with diluted gelatin into a homogeneous mass without lumps.
  8. Pour sour cream into a bowl with herring and cucumbers.
  9. Stir, salt and pepper to taste.
  10. Arrange the herring appetizer in portioned glasses and refrigerate until the sour cream jelly hardens.A delicious herring appetizer is ready.
