Herring Ceviche with Cucumber and Apple

Apples are not only delicious pastries, but also delicious salads! Ceviche is the national dish of Peru. An important condition for ceviche is the freshest seafood. In our reality it is difficult to find fresh (not frozen) seafood.

Ingredients

  • 200 g Lightly salted herring
  • 1 cucumber
  • 1 sour hard apple
  • 1 red onion
  • 1/2 bell pepper
  • Chard or young beet tops (or a leaf of any salad)
  • Sugar
  • 1 teaspoon Table vinegar 9%

Refueling:

  • 1-2 cloves of garlic
  • 20 gr. grated fresh ginger
  • juice of half a lemon
  • 1 teaspoon soy sauce
  • 1-2 tablespoon vegetable oil
    finely chopped cilantro

Directions

  1. Cut the herring fillets into thin slices, lightly sprinkle with sugar and pour with vinegar. Peel the apple. Cut the apple, cucumber, and pepper into small cubes. Cut the onion into half rings.
  2. Prepare the dressing: Mix the crushed garlic with lemon juice, soy sauce, cilantro, ginger, and vegetable oil. Add chard (can be replaced with leaves of any salad), pour over the dressing, and mix everything thoroughly. And immediately serve it to the table.
