Herring Fried in Herb Coating

Ingredients

2 matjes fillet (s), very good quality, or a double matjes separately
1 tablespoon herbs, chopped (smooth and curly parsley, 3 sage leaves, stalk lovage, 2 stalks thyme)
50 g breadcrumbs
1 egg (s), devious
some flour
oil

Instructions

Mix the chopped herbs with the breadcrumbs. Turn the fish fillets first in flour, then in egg, and finally in breadcrumbs, pressing down the breadcrumbs well.
Heat the oil, fry the fillets until golden brown on both sides.
I served it with crispy potato cubes and bean salad.
Definitely give it a try, the matjes taste delicious.
