Homemade Chicken Brawn

The recipe for a simple and affordable chicken snack that can be a great substitute for sausage. It turns out a very fragrant, tender and juicy brawn.

Ingredients

  • Chicken – 1.5 kg (boneless chicken – 1.2 kg)
  • Water – 50-100 g
  • Gelatin – 25 g
  • Bay leaf – 2 pcs.
  • Allspice peas – 3 peas
  • Hot black peppercorns – 3 peas
  • Garlic – 2-4 cloves
  • Salt – 1 teaspoon (to taste)

Directions

  1. I took a chicken weighing 2 kg and already peeled it of veins and skin.
  2. Also, I will not use one part of the breast, so that the brawn is not too dry – I cut it off too.
  3. Cut the chicken into portions.
  4. Put the chicken in a saucepan, in which we will continue to cook it. I have 1 kg 525 g of chicken in a saucepan.
  5. Add gelatin, bay leaves, allspice and black pepper and water. To cover with a lid.
  6. Place the pot with chicken meat in a pot of larger dia with water. Simmer the chicken in this water bath for 2-2.5 hours. Add water to the lower pot if necessary. The temperature in the chicken pot will not rise to 100 degrees. Chicken meat will slowly simmer, as a result it will be very tender and juicy, and gelatin will retain its properties
  7. Separate the chicken from the bones. If necessary, it can be chopped or broken into smaller pieces.
  8. Peel the garlic and grate it on a fine grater.
  9. Strain the broth through a sieve covered with 2-4 layers of gauze.
  10. Add chopped garlic to the chicken. You can also add your favorite spices. Stir the chicken meat gently so that the garlic spreads throughout its entire volume.
  11. Transfer the meat to a clean juice tetra pack (you can also use a cylindrical plastic bottle or a bread pan as a mold).
  12. Tamp the chicken meat in a mold.
  13. Pour the resulting broth with gelatin over the chicken.
  14. In order for the broth to pass through the entire volume of the form, you can make punctures with a skewer. Cover the form with cling film and leave to cool completely at room temperature. Put the cooled brawn in the refrigerator for 3-4 hours, until it is completely stabilized.
  15. After the brawn has solidified, cut the tetrapak. The brawn turned out to be quite dense and keeps its shape well.
  16. Slice homemade chicken brawn for serving.
