Homemade Sausage “Meat Platter”

I propose a recipe for a very tasty and juicy sausage, which has a beautiful cut and rich taste, since several types of meat are used: chicken thighs, chicken breast, beef and boiled-smoked bacon. The preparation is very simple and fast.

Ingredients

  • Chicken thigh fillet – 700 g
  • Chicken breast fillet – 150 g
  • Beef – 150 g
  • Cooked-smoked bacon – 50 g
  • Starch – 15-20 g (up to 2% of the mass of minced meat)
  • Salt – 1 teaspoon without a slide
  • Sugar – 1 teaspoon without a slide
  • Dried garlic – 1 teaspoon.
  • Ground nutmeg – 1/3 teaspoon
  • Ground black pepper – to taste

Directions

  1. Leave one chicken thigh. Grind the rest of the thighs together with the bacon into minced meat in a meat grinder.
  2. Cut the remaining chicken thigh, chicken fillet and beef into small cubes.
  3. Combine minced meat with chopped meat, add spices (nutmeg, dried garlic, salt and sugar) and starch.
    Mix. Beat the minced meat on the bottom of the bowl (about 20 times).
  4. Turn on the oven to heat up to 200 degrees. Divide the minced meat into 2 parts (about 460 g each). Cut the baking sleeve lengthwise, put the minced meat on it. Shape the sausage by wrapping the minced meat in a sleeve. Fix the edges on both sides. Thus, form another sausage.
  5. From above, pierce the sleeve in several places with a toothpick or needle so that it does not burst when baking. Bake the cold cuts sausage in the oven for 30-40 minutes.
  6. Allow the finished sausage to cool, remove from the sleeve, cut into slices and you can taste.
