Potatoes Stewed with Meat, Vegetables and Homemade Sausages

For such a stew, you need to cook homemade sausages from couscous, carrots, and onions, and simmer them with meat and potatoes.

Ingredients

  • Onions (cut in half rings) – 5 pcs.
  • Bay leaf – 3 pcs.
  • Beef brisket – 1.6 kg
  • Garlic (unpeeled) – 1 head (disassembled into cloves)
  • Carrots (cut in large pieces) – 4 pcs.
  • Paprika – 1-2 teaspoon
  • Beef broth – 500 g (2 cups)
  • Potatoes (peeled and cut into quarters) – 3-4 pcs.
  • Salt and black pepper to taste

For sausages:

  • Gut for filling – 90 cm
  • Wheat flour – 250 g (2 1/4 cups)
  • Couscous – 120 g (1/2 cup)
  • Paprika – 2-3 teaspoon
  • Carrots (chopped on a grater) – 1 pc.
  • Carrots (cut into small cubes) – 2 pcs.
  • Chicken or other fat – 250 g (1 cup)
  • Onions (chopped and fried) – 30 g (2 tablespoon. L.)
  • Fresh onions (chopped on a grater) – 1/2 pc.
  • Fresh onions (cut in half rings) – 3 pcs.
  • Garlic (finely chopped) – 3 cloves
  • Salt and black pepper to taste

Directions

  1. Turn on the oven to preheat to 180 degrees. Put 1/3 of the onion cut in half rings and 1/3 of the bay leaf into a roasting pan, put the beef on top. Sprinkle the meat with whole garlic cloves, the remaining bay leaf, put the carrots, sprinkle everything with salt, black pepper, paprika and the remaining onion. Pour everything with a sufficient amount of broth (the liquid should be 5-7 cm higher than the contents of the brazier) Cover the roasting pan with a lid or foil and place in the preheated oven for 2 hours.
  2. Meanwhile, prepare the sausages. In a large bowl, combine flour, couscous, paprika, all carrots, fat, fresh and fried onions, garlic, salt, and pepper to taste, mix everything well. Stuff the intestines with this mass and put the sausages in a roasting pan with the meat. At the same time, put the potatoes, cook for about 1 hour more, until the meat and potatoes are cooked.
  3. Remove the lid (foil) from the brazier and increase the temperature in the oven to 200 degrees. Spread the onions on the surface along the edges and put the roasting pan in the oven again, cook for about 30 minutes, until the meat, potatoes, and onions are golden brown. Serve hot.
