Ingredients

  • 500 g spelled flour
  • 1 bag / s dry yeast
  • 4 tablespoon pumpkin seeds
  • 4 tablespoon sunflower seeds
  • 4 tablespoon sesame seeds
  • 4 tablespoon flaxseed, crushed
  • 2 teaspoons, leveled salt
  • 1 teaspoon, leveled bread spice mixture
  • 1 teaspoon honey (blossom honey), more liquid
  • 3 teaspoons tea (Jiaogulan tea)
  • 150 ml water, hot
  • 200 ml water
  • Bran (wheat bran) for sprinkling

Instructions

  1. Mix the dry ingredients well except for the wheat bran. Now only the water, the tea and the honey are added to the dry mix.
  2. The tea from Jiaogulan is made as follows: 3 teaspoons of the dried herb should steep for 5 - 10 minutes with 150 ml of approx. 90 degree hot water. I never throw away the scalded herb. I put it in the batter!
  3. So add the tea and cabbage to the other ingredients and knead well with the dough hook. The dough is then baked in a bread pan lined with baking paper at 200 ° C in the oven for 80 minutes.
  4. I sprinkle the dough in the mold with wheat bran and spray it abundantly with water. This makes the crust particularly beautiful!
  5. I also put a bowl of water in the oven. I only use top / bottom heat to bake bread and have to cover the bread with aluminum foil after approx. 50 - 60 minutes, as the right degree of browning is achieved.
  6. The dry mix can be wonderfully prepared in advance, so you have your own baking mix and later only need to quickly add honey, water and tea!
